In November 2013, Rake of Cakes changed from an online blog to a real-life ACTUAL business! From setting up my first little market stall, to building a loyal customer base and then moving into our awesome little, the success of Rake of Cakes has just been totally unprecedented. What started as a way of filling my spare time with a hobby that I love ended up being my full time job .. and a job that I adore at that!
Change is around the corner though and I am so excited!
On July 7th 2015, myself and my fiancé, Ciaran, are taking our bikes and hitting the road! It has been a dream of ours for years to travel the world. It is a year-long project aimed at collecting recipes and experiencing life on the road without gluten. Try finding information on camping and cooking cheap food if you're coeliac ... the information available is so limited and makes it a daunting venture for anyone on restricted diets. Will there be adequate food available to bring to your campsite and keep you full for a day's cycling? Will you be able to stick to your budget while buying coeliac-friendly foods? How easy will it be to communicate your restricted diet to non-English speakers in remote areas? So many questions and so few answers online. I aim to keep an online diary of my food journey around the world, with yummy plenty of photos as well as tips and ideas we come across along the way. And most importantly, I will be collecting recipes and ideas for Rake of Cakes to bring home and develop!
BUT WHAT ABOUT RAKE OF CAKES IN WEXFORD???
Fret not! Rake of Cakes is going nowhere! My lifelong baking coach, the woman who taught me everything and my go-to-helper in the kitchen is taking the reins while I head off on this project! My baking partner in crime - "The Mammy" - or Eleanor as she is more commonly known, will be running the show and greeting yee all in the market while I am off pedalling the planet, tasting exotic gluten-free creations!
So for all of my awesome customers, it's business as usual! I'm so excited to share all of our adventures with you but in the meantime I look forward to the next few months before we head off of baking yummy creations for yee all!
